Hand-forged in Japan, the Kasumi Damascus 13 cm (5″) Santoku is a compact, precision-grade Japanese chef knife built for cooks who value control. At this size it’s nimble for delicate work – small vegetables, garnish, boneless fish – yet substantial enough to be your daily driver in a small kitchen.

Authentic Japanese Craftsmanship

The blade is forged from V-Gold No. 10 (VG-10) high-carbon stainless steel – one of the most respected knife steels in Japan – and finished with a stunning 33-layer Damascus pattern produced through repeated folding and forging in the traditional Japanese method. Ground to a steep 15-degree edge and hardened to 59-60 HRC, it takes and holds an exceptionally fine edge. Full-tang construction and a laminated wooden handle complete a knife built to last a lifetime.

Care & Maintenance

Hand-wash only with mild soap and warm water; dry immediately. Do not put in the dishwasher. Hone regularly and sharpen with a Japanese whetstone (1000/3000 or 1000/6000 grit) to maintain the factory edge.
